Last week’s news – Seniors, here are some ways to liven up your meals with fruits and vegetables.  Try grilling mushrooms, carrots, peppers and potatoes on a kabob skewer, brushing them with oil.  Or try peaches, pineapple and mangos.  Mix sautéed onions, peas or tomatoes in your favorite casserole.  Toss in shredded carrots, spinach, watercress or sweet peas into your salad.  Try stir-frying broccoli, carrots, snap peas, mushrooms or green beans for a quick addition to your meal.  Use apples, bananas, blueberries or pears in your favorite muffin recipe.  Make a strawberry, frozen banana and orange juice fruit smoothie.  Or boost your morning omelet with mushrooms, spinach, onions and bell peppers.
